Succulent Swedish Meatballs with Creamy Gravy
Ingredients
For the Meatballs:
- 1 lb ground beef
- 1/2 lb ground pork
- 1 large white onion, finely diced
- 2 garlic cloves, minced
- 1/2 cup whole milk
- 1 large egg
- 1 cup panko breadcrumbs
- 1 1/2 tsp kosher salt
- 1 tsp black pepper
- 2 tbsp olive oil (for frying)
For the Gravy:
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups beef stock
- 1/2 cup heavy cream
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tbsp dill pickle juice
- Salt and pepper to taste
Instructions
1. Prepare the Meatball Mixture:
- In a large mixing bowl, combine ground beef, ground pork, diced onion, and minced garlic.
- In a separate small bowl, whisk together the whole milk and egg until well combined. Pour this mixture over the meat.
- Add panko breadcrumbs, kosher salt, and black pepper to the meat mixture. Gently mix by hand until just combined. Avoid over-mixing to maintain tender meatballs.
2. Shape the Meatballs:
- Using your hands or a scoop, form the mixture into meatballs approximately 1 1/2 inches in diameter. You should have about 20 meatballs.
3. Pan Fry the Meatballs:
- In a large skillet, heat olive oil over medium heat. Add the meatballs in batches to prevent overcrowding.
- Cook each meatball for about 7 minutes, turning occasionally, until browned on all sides and cooked through. Remove cooked meatballs and set aside on a paper towel-lined plate.
4. Make the Gravy:
- In the same skillet, melt unsalted butter over medium heat. Sprinkle in the flour and whisk continuously for 1-2 minutes until the mixture is golden brown and bubbling.
- Gradually pour in the beef stock while whisking to ensure a smooth consistency. Simmer for 3 minutes.
- Stir in heavy cream, Worcestershire sauce, Dijon mustard, and dill pickle juice.
- Season with salt and pepper to taste, and let the gravy simmer for another 5 minutes, stirring frequently, until it thickens.
5. Combine and Serve:
- Add the cooked meatballs back to the skillet, gently spooning gravy over them to coat.
- Simmer the meatballs in the gravy for an additional 5 minutes to heat through and meld flavors.
6. Presentation:
- Serve hot with a generous amount of gravy over the top. Pair with mashed potatoes or egg noodles for a delightful meal.
