Roasted Harvest Vegetable Medley
Ingredients
- 1 pound Brussels sprouts, trimmed and halved
- 1/2 head cauliflower, cut into florets
- 2 medium sweet potatoes, peeled and cubed
- 2 parsnips, peeled and sliced
- 3 large carrots, peeled and sliced
- 1 small head broccoli, cut into florets
- 1 pound butternut squash, peeled, seeded, and cubed
- 1 small pumpkin, peeled, seeded, and cubed
- 1 summer squash, sliced
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1/4 cup olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon mixed herbs (such as thyme, rosemary, and oregano)
- 1 teaspoon ground spices (such as cumin and paprika)
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (204°C).
2. Prepare the Vegetables:
In a large mixing bowl, combine the Brussels sprouts, cauliflower, sweet potatoes, parsnips, carrots, broccoli, butternut squash, pumpkin, and summer squash.
3. Season the Vegetables:
Drizzle the olive oil over the vegetables in the bowl. Add the salt, pepper, mixed herbs, and ground spices. Toss everything together until the vegetables are evenly coated.
4. Arrange on a Baking Sheet:
Spread the seasoned vegetables in a single layer on a large baking sheet. Ensure that they have enough space to roast evenly without overlapping.
5. Roast the Vegetables:
Place the baking sheet in the preheated oven and roast for 25 minutes.
6. Add Asparagus:
After 25 minutes, remove the baking sheet and add the asparagus to the mix. Gently stir the vegetables, ensuring the asparagus is coated with the existing seasonings.
7. Final Roasting:
Return the baking sheet to the oven and roast for an additional 10-15 minutes, or until all vegetables are tender and slightly caramelized around the edges.
8. Serve:
Remove the roasted vegetables from the oven and transfer them to a serving platter. Adjust seasoning if necessary and serve warm.
