Irresistible Spiced Pumpkin Dessert Bars
Ingredients
- 1 cup unsalted butter, melted
- 1 1/2 cups granulated sugar
- 1 cup light brown sugar, packed
- 2 teaspoons vanilla extract
- 4 large eggs
- 1 1/2 cups pure pumpkin puree
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons fine sea salt
- 2 teaspoons pumpkin spice
Instructions
1. Preheat the Oven:
Set your oven to 350°F (175°C) and allow it to thoroughly preheat to ensure even baking.
2. Prepare Baking Dish:
Grease and line a 9x13-inch baking dish with parchment paper, allowing a slight overhang on the sides for easy removal of the bars once baked.
3. Mix Wet Ingredients:
In a large mixing bowl, combine the melted butter, granulated sugar, and light brown sugar. Whisk together until smooth and well-blended.
Add the vanilla extract and eggs, one at a time, beating well after each addition until the mixture is light and fluffy.
Stir in the pumpkin puree until fully incorporated.
4. Combine Dry Ingredients:
In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, fine sea salt, and pumpkin spice. Make sure the dry mixture is well combined, breaking up any lumps.
5. Incorporate Dry into Wet Mixture:
Gradually add the dry ingredients to the wet ingredients, stirring gently with a spatula until just combined. Be careful not to overmix, as this can affect the texture of the bars.
6. Transfer and Smooth:
Pour the batter into the prepared baking dish, spreading evenly with a spatula for a uniform thickness across the dish.
7. Bake:
Place the dish in the oven and bake for 30-35 minutes. To check for doneness, insert a toothpick in the center of the bars—if it comes out clean, the bars are ready.
8. Cool and Cut:
Remove the baking dish from the oven and allow it to cool on a wire rack. Once cooled, use the parchment overhang to lift the bars from the dish. Cut into equal squares to serve.
