Hearty Lentil and Tomato Stew with Butternut Squash and Ginger



Ingredients



- 1 cup lentils, rinsed and drained
- 2 large tomatoes, diced
- 1 cup carrots, diced
- 1 tablespoon fresh ginger, minced
- 2 medium potatoes, peeled and cubed
- 1 leek, white and light green parts, sliced
- 1 cup butternut squash, peeled and cubed
- 1 tablespoon aged balsamic vinegar
- 1 tablespoon red wine vinegar
- 1 tablespoon rice wine vinegar
- 1 tablespoon sherry vinegar
- 1 tablespoon apple cider vinegar
- 4 cups vegetable broth
- Salt and black pepper to taste
- 2 tablespoons olive oil

Instructions



1. Prepare the Ingredients
Begin by dicing the tomatoes and carrots, cubing the potatoes and butternut squash, and slicing the leek. Rinse the lentils under cold water and drain.

2. Sauté the Vegetables
In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced leek and minced ginger, sautéing for 3-4 minutes until the leek is soft and fragrant.

3. Add the Root Vegetables
Add the diced carrots, cubed potatoes, and butternut squash to the pot. Stir and sauté for an additional 5 minutes, allowing the vegetables to slightly caramelize.

4. Incorporate the Tomatoes and Lentils
Stir in the diced tomatoes and lentils, cooking for another 2 minutes until the tomatoes begin to break down and release their juices.

5. Deglaze and Simmer
Pour in the aged balsamic vinegar, red wine vinegar, rice wine vinegar, sherry vinegar, and apple cider vinegar. Deglaze the pot by stirring, scraping up any browned bits from the bottom. Add the vegetable broth, then season with salt and black pepper.

6. Simmer Until Tender
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for 35 minutes, or until the lentils and vegetables are tender and the flavors are melded.

7. Final Seasoning
Taste and adjust the seasoning with additional salt or black pepper, if necessary.

8. Serve
