Zesty Lemon Artichoke Campanelle with Parmesan
Ingredients
- 12 ounces dry campanelle pasta
- 1 tablespoon kosher salt (for pasta water)
- 1/4 cup unsalted butter
- 1 cup marinated artichoke hearts, drained and chopped
- 1/4 cup fresh lemon juice
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1 cup grated Parmesan cheese
- Additional salt to taste
Instructions
1. Prepare the Pasta
- Fill a large pot with water, add 1 tablespoon of kosher salt, and bring to a boil.
- Add the campanelle pasta, and cook according to package instructions until al dente (approximately PT8M, 8 minutes). Drain, reserving about 1 cup of pasta water.
2. Sauté the Artichokes
- In a large skillet over medium heat, melt the unsalted butter.
- Add the chopped marinated artichoke hearts to the skillet.
- Cook for 3-4 minutes, stirring occasionally until they are warmed through.
3. Create the Sauce
- Lower the heat to medium-low.
- Add the fresh lemon juice to the skillet and stir well.
- Sprinkle in the black pepper and red pepper flakes, adjusting to taste.
- Gradually add 1/2 cup of the reserved pasta water to the skillet, stirring to create a smooth, emulsified sauce.
4. Combine and Finish
- Add the cooked campanelle pasta to the skillet, tossing to coat the pasta with the sauce thoroughly.
- Sprinkle the grated Parmesan cheese over the pasta, stirring gently until melted and evenly distributed.
- If the pasta appears dry, add more reserved pasta water, a little at a time, until desired consistency is reached.
- Taste and add additional salt if needed.
5. Serve
- Transfer the pasta to serving plates.
- Garnish with additional Parmesan cheese and a sprinkle of red pepper flakes if desired.
- Serve immediately.
