Oven-Baked Herb Stuffing with Sausage and Autumn Vegetables
Ingredients
- 8 cups cubed bread (day-old, preferably)
- 2 medium apples, peeled, cored, and diced
- 2 cups celery, chopped
- 1 tablespoon poultry seasoning
- 1/4 cup fresh parsley, finely chopped
- 2 cups chicken stock
- 1 tablespoon fresh rosemary, minced
- 1 tablespoon fresh thyme, minced
- 1 tablespoon fresh sage, minced
- 1 cup crumbled cooked sausage
- 1 medium sweet potato, peeled and diced
- 1 medium butternut squash, peeled, seeded, and diced
- 1 cup chopped pecans
- 2 large eggs, beaten
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
1. Preheat the Oven:
- Preheat your oven to 375°F.
2. Prepare Bread:
- Spread the cubed bread on a baking sheet in a single layer. Toast in the oven for about 10 minutes or until golden brown. Remove and set aside to cool.
3. Prepare Vegetables:
- In a large mixing bowl, combine diced apples, celery, sweet potatoes, butternut squash, and chopped pecans. Drizzle with olive oil, season with salt and pepper, and gently toss to coat.
4. Roast Vegetables:
- Spread the vegetable mixture evenly on a baking sheet. Roast in the oven for 25-30 minutes, or until tender and slightly caramelized. Remove from the oven and allow to cool slightly.
5. Mix Ingredients:
- In a large mixing bowl, combine the toasted bread cubes, roasted vegetable mixture, and crumbled cooked sausage. Add poultry seasoning, parsley, rosemary, thyme, and sage. Toss together until well combined.
6. Add Wet Ingredients:
- In a separate bowl, whisk together the chicken stock and beaten eggs. Pour over the bread and vegetable mixture and gently toss until evenly moistened.
7. Bake Stuffing:
- Transfer the mixture to a greased baking dish, spreading it evenly. Cover with foil and bake in the preheated oven for 20 minutes.
8. Finish Crisping:
- Remove the foil and continue baking for an additional 15-20 minutes, until the top is crispy and golden brown.
9. Serve the Dish:
- Remove from oven and let it cool for a few minutes before serving. Garnish with additional parsley, if desired.
