Oven-Baked Parmesan Veggie Medley with Herbed Buttermilk Cornbread



Ingredients



For the Veggie Medley:

- 1 cup spinach
- 2 cups broccoli florets
- 2 large carrots, sliced
- 1 sweet potato, diced
- 1 zucchini, sliced
- 1 cup asparagus, chopped

- 1/2 cup parmesan cheese, grated
- Salt and black pepper to taste

For the Herbed Buttermilk Cornbread:

- 1 cup buttermilk
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup melted butter
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon mixed herbs (dried thyme, rosemary)

Instructions



Prepare the Veggie Medley:

1. Preheat the Oven: Preheat your oven to 400°F (200°C).

2. Mix the Vegetables: In a large mixing bowl, combine spinach, broccoli, carrots, sweet potatoes, zucchini, asparagus, onion, garlic, shiitake mushrooms, Brussels sprouts, and peas.

3. Season and Coat: Drizzle with olive oil, then sprinkle rosemary, thyme, salt, and black pepper. Toss well to ensure all veggies are evenly coated.

4. Arrange for Baking: Transfer the seasoned veggie mix onto a large baking sheet, spreading them out evenly.

5. Bake the Veggies: Place the baking sheet in the preheated oven and bake for 25 minutes, stirring halfway through to ensure even cooking.

6. Add Parmesan: Remove the veggies, sprinkle grated parmesan cheese over the top, and return to the oven for an additional 5-10 minutes, or until the cheese is melted and slightly golden.

Prepare the Herbed Buttermilk Cornbread:

1. Mix Dry Ingredients: In a mixing bowl, combine cornmeal, flour, sugar, baking powder, baking soda, salt, and herbs.

2. Add Wet Ingredients: Make a well in the dry ingredients, then pour in buttermilk and melted butter. Mix until just combined.

3. Prepare Baking Dish: Grease a 9x9-inch baking dish with butter or non-stick spray.
