Perfectly Spiced Pumpkin Snack Bars



Ingredients


- 1/2 cup butter, softened
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 2 large eggs

- 1 cup pumpkin puree
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder

- 1 tablespoon pumpkin spice

Instructions


1. Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish with butter or line it with parchment paper for easy removal.

2. Cream the butter and sugars: In a large mixing bowl, combine 1/2 cup of softened butter, 1 cup of granulated sugar, and 1/2 cup of packed light brown sugar. Use an electric mixer to cream together on medium speed until the mixture is light and fluffy, approximately 3-4 minutes.

3. Incorporate the wet ingredients: Beat in the 2 large eggs one at a time, ensuring each egg is fully integrated before adding the next. Mix in 1 teaspoon of vanilla extract and 1 cup of pumpkin puree until smoothly combined.

4. Mix the dry ingredients separately: In another bowl, whisk together 1 3/4 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, and the 1 tablespoon of pumpkin spice.

5. Combine dry and wet ingredients: Gradually add the dry mixture to the wet ingredients, mixing on low speed just until combined. Avoid over-mixing to maintain a tender texture in the bars.

6. Transfer and smooth the batter: Pour the batter into the prepared baking dish, spreading it evenly with a spatula.

7. Bake the bars: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

8. Cool and serve: Allow the bars to cool in the pan on a wire rack for at least 20 minutes before cutting and serving to ensure proper setting and easier slicing.
