Delightful Egg and Rice Skillet Dinner
Ingredients
- 1 cup uncooked rice
- 2 cups water
- 4 large eggs
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions
1. Cook the Rice:
- In a medium saucepan over medium-high heat, combine 1 cup of uncooked rice and 2 cups of water.
- Bring to a boil, then reduce the heat to low and cover.
- Simmer for approximately 18 minutes or until the rice has absorbed all the water.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork before proceeding.
2. Prepare the Eggs:
- In a large non-stick skillet, heat 2 tablespoons of olive oil over medium heat.
- Once the oil is shimmering, crack the 4 large eggs into the skillet.
- Sprinkle with 1/2 teaspoon salt, 1/4 teaspoon pepper, 1/2 teaspoon garlic powder, and 1/4 teaspoon paprika.
- Cook the eggs until the whites are set but the yolks are still runny, about 3-4 minutes. For firmer yolks, cover the skillet and cook an additional 2 minutes.
3. Combine and Serve:
- Add the cooked rice to the skillet with the eggs.
- Gently fold the rice into the eggs, trying not to break the yolks.
- Cook for an additional 2 minutes to warm through.
- Garnish with 1 tablespoon of fresh chopped parsley if desired.
4. Plate and Enjoy:
- Divide the egg and rice mixture between four plates.
- Serve immediately for a satisfying and simple dinner.
