Apple-Cranberry Almond Clafoutis
Ingredients
- 2 large apples, peeled, cored, and thinly sliced
- 1 cup fresh cranberries
- 1 cup orange juice
- 1 tbsp orange zest
- 3 tbsp unsalted butter, melted
- 4 large eggs
- 1 cup granulated sugar
- 1/2 tsp almond extract
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/4 tsp salt
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Prepare the Baking Dish
Grease a 9x9-inch baking dish with a small amount of the melted butter to prevent sticking.
3. Prep the Fruit
Evenly distribute the apple slices and cranberries in the greased baking dish. Ensure the fruit is spread uniformly.
4. Mix the Batter
In a mixing bowl, whisk together the eggs and sugar until the mixture is pale and frothy. This will take about 2-3 minutes of vigorous whisking.
5. Add Flavors
Stir in the melted butter, almond extract, vanilla extract, orange zest, and orange juice into the egg mixture. Mix well to combine.
6. Incorporate Dry Ingredients
Gradually sift the flour and salt into the wet ingredients, whisking continuously to ensure a smooth batter with no lumps.
7. Pour and Bake
Pour the batter over the arranged fruit in the baking dish. Tap the dish gently on the countertop to remove any air bubbles and settle the batter.
8. Bake the Clafoutis
Place the baking dish into the preheated oven and bake for 40-45 minutes, or until the clafoutis is puffed up and golden brown on the edges.
9. Check for Doneness
Insert a toothpick in the center; it should come out clean.
10. Cool Before Serving
Allow the clafoutis to cool for about 10 minutes before slicing and serving.
