Decadent Chocolate Sour Cream Cake with Maple Syrup Glaze
Ingredients
- 1 cup unsweetened cocoa powder
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar

- 1/2 cup boiling water
For the Maple Syrup Glaze:
- 1 cup powdered sugar
- 3 tablespoons pure maple syrup
- 2 tablespoons sour cream
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
2. Prepare the Dry Ingredients
In a medium bowl, sift together the cocoa powder, flour, baking powder, baking soda, and salt. Set aside.
3. Cream the Butter and Sugar
In a large mixing bowl, beat the butter and granulated sugar together using an electric mixer on medium speed until light and fluffy. This should take about 3 to 4 minutes.
4. Add Eggs and Vanilla
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
5. Incorporate Dry Ingredients and Sour Cream
Gradually add the dry ingredients to the butter mixture, alternating with the sour cream, beginning and ending with the dry ingredients. Mix just until combined.
6. Add Boiling Water
Carefully stir in the boiling water until the batter is smooth and well combined. The batter will be thin.
7. Bake the Cakes
Divide the batter evenly between the prepared pans. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
8. Cool the Cakes
Allow cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
9. Prepare the Maple Syrup Glaze
In a small bowl, whisk together the powdered sugar, maple syrup, and sour cream until smooth. Adjust the consistency with more maple syrup if needed.
10. Assemble the Cake
Place one cake layer on a serving platter. Spread a layer of maple syrup glaze over the top. Place the second cake layer on top, and drizzle the remaining glaze over the top, allowing it to drip down the sides.
