Deliciously Hearty Sausage and Tortellini Stew
Ingredients
- 1 pound Italian sausage, casings removed
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 stalks celery, diced
- 2 large carrots, sliced
- 1 zucchini, diced
- 4 cups chicken stock
- 1 can (15 ounces) white beans, drained and rinsed
- 1 can (15 ounces) canned beans, drained and rinsed (kidney or cannellini)
- 1 package (9 ounces) tortellini
- 1 cup heavy cream
- 2 cups fresh spinach, roughly chopped
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions
1. Prepare the Ingredients: Before starting, ensure all vegetables are washed and properly diced. Drain and rinse the canned beans.
2. Brown the Sausage: In a large pot over medium heat, add the sausage and cook, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes. Remove and set aside, leaving the rendered fat in the pot.
3. Sauté Vegetables: To the same pot, add onions, garlic, celery, carrots, and zucchini. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables are slightly softened.
4. Add Chicken Stock and Beans: Pour in the chicken stock, and add both the white beans and canned beans. Stir the mixture, ensuring to scrape up any browned bits from the bottom of the pot. Bring to a simmer.
5. Cook Tortellini: Add the tortellini to the pot and continue to simmer for another 10-12 minutes, or until the tortellini are tender and cooked through.
6. Incorporate Cream and Spinach: Reduce the heat to low and stir in the heavy cream and chopped spinach. Let it cook for an additional 3-5 minutes until the spinach is wilted.
7. Add Vinegar and Season: Stir in the apple cider vinegar, adjust seasoning with salt and pepper to taste, then re-add the browned sausage to heat through for the final couple of minutes.
8. Serve: Ladle the stew into bowls and serve hot, perhaps garnished with a sprinkle of freshly grated cheese or fresh herbs for an added flair.
