Hearty Split Pea and Vegetable Stew



Ingredients



- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 large carrots, peeled and diced
- 1 pound red baby potatoes, quartered
- 1 1/2 cups split green peas, rinsed
- 6 cups chicken stock

Instructions



1. Prep the Ingredients:
- Dice the onion and peel and dice the carrots. Mince the garlic and quarter the red baby potatoes. Rinse the split green peas thoroughly under cold water.

2. Begin the Stew Base:
- Heat 2 tablespoons of olive oil in a large pot over medium heat on the stove.
- Add the diced onion and minced garlic. Sauté for approximately 5 minutes, or until the onions are translucent and fragrant.

3. Incorporate Seasonings:
- Stir in 1 teaspoon of dried oregano, 1 teaspoon of salt, and 1/2 teaspoon of black pepper, and cook for another minute to release their flavors.

4. Add Veggies:
- Add the diced carrots and quartered baby potatoes to the pot. Sauté while stirring occasionally for about 5 minutes, allowing the vegetables to slightly soften.

5. Combine Peas and Stock:
- Introduce the rinsed split green peas into the pot, followed by 6 cups of chicken stock.
- Stir all ingredients to incorporate them evenly.

6. Simmer to Perfection:
- Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to low.
- Cover the pot with a lid and let the stew simmer gently for approximately 60 minutes, or until the peas are tender and the stew has thickened to your desired consistency. Stir occasionally to prevent sticking.

7. Final Touches:
- Adjust seasonings to taste, adding more salt and pepper if necessary.
- Serve hot, garnished with a sprinkle of fresh herbs if desired.
