Spaghetti with Garlic-Caper Tuna and Crispy Breadcrumbs



Ingredients



- 12 oz spaghetti
- 1/4 cup extra-virgin olive oil
- 4 cloves garlic, thinly sliced
- 1 can (15 oz) cannellini beans, drained and rinsed
- 2 cans (5 oz each) albacore tuna, drained
- 2 tbsp lemon juice
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 cup fresh parsley, chopped
- 1/2 cup toasted breadcrumbs
- 2 tbsp capers, drained
- 1/2 tsp crushed red pepper flakes

Instructions



1. Cook the Spaghetti:
Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente according to package instructions, approximately PT10M (10 minutes). Reserve 1 cup of pasta water, then drain the pasta.

2. Prepare the Sauce:
In a large skillet, heat the extra-virgin olive oil over medium heat. Add the sliced garlic and sauté until golden and fragrant, about PT2M (2 minutes).

3. Add the Beans and Tuna:
Stir in the cannellini beans, breaking them up slightly with a wooden spoon. Add the drained tuna, breaking it into chunks. Cook for PT3M (3 minutes), allowing flavors to meld.

4. Combine Ingredients:
Add the cooked spaghetti to the skillet along with the lemon juice, kosher salt, black pepper, and reserved pasta water. Toss everything together over medium heat until well coated. Cook for an additional PT2M (2 minutes).

5. Add Fresh Elements:
Stir in the chopped parsley and capers, and sprinkle with crushed red pepper flakes. Adjust seasoning as needed.

6. Finish with Crispy Breadcrumbs:
Divide the pasta among four plates. Top each serving with a generous sprinkle of toasted breadcrumbs for added texture and serve immediately.
