Crispy Oven-Baked Dumplings with Coconut Peanut Sauce
Ingredients
Dumplings and Vegetables:
- 16 frozen dumplings
- 1 cup bok choy, chopped
- 1 cup spinach
Coconut Peanut Sauce:
- 1 cup coconut milk
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon chili oil
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
Garnish:
- 1/4 cup cilantro, chopped
- 1/4 cup Thai basil, chopped
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (200°C). Place a baking sheet inside to heat up as the oven preheats.
2. Prepare the Dumplings:
Arrange the frozen dumplings on a baking sheet lined with parchment paper. Ensure they are spaced apart.
3. Roast Vegetables:
In a bowl, toss the chopped bok choy and spinach with 1 teaspoon of sesame oil. Spread these around the dumplings on the baking sheet.
4. Bake Dumplings and Vegetables:
Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the dumplings are golden and crispy, and the vegetables are roasted but still vibrant.
5. Make the Coconut Peanut Sauce:
In a saucepan over medium heat, combine the coconut milk, peanut butter, soy sauce, chili oil, grated ginger, minced garlic, fish sauce, and rice vinegar. Stir until smooth and simmer for about 5 minutes until slightly thickened.
6. Flavor the Sauce with Sesame Oil:
Remove the sauce from heat, and add the remaining sesame oil. Stir to incorporate.
7. Plate the Dish:
Arrange the baked dumplings and roasted vegetables on a serving platter. Drizzle generously with coconut peanut sauce.
8. Garnish:
Sprinkle chopped cilantro and Thai basil over the top before serving.
