Irresistible Raspberry Crumble Cake
Ingredients
- 1 box yellow cake mix (15.25 oz)
- 1/2 cup (1 stick) unsalted butter, melted
- 1 large egg
- 1 cup raspberry preserves
- 2 cups corn flakes, lightly crushed
Instructions
1. Preheat and Prepare:
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick cooking spray.
2. Mix the Base Layer:
In a large mixing bowl, combine the yellow cake mix, melted butter, and egg. Stir together until fully blended. The mixture will be thick and crumbly.
3. Create the Base:
Press two-thirds of the cake mix mixture into the bottom of the prepared baking dish. Use your fingers or the back of a spoon to spread evenly, forming a solid base layer.
4. Add the Raspberry Layer:
Evenly spread the raspberry preserves across the cake base. Make sure to cover the entire surface with a thin layer.
5. Make the Crumble Topping:
In a separate bowl, mix the remaining cake mix mixture with the lightly crushed corn flakes. Sprinkle this crumble mixture evenly over the raspberry layer.
6. Bake:
Place the baking dish in the preheated oven. Bake for 30 to 35 minutes, or until the top is golden brown and the cake edges are set. Check the cake after 30 minutes to prevent over-browning.
7. Cool and Serve:
Remove the cake from the oven and allow it to cool in the dish for about 15 minutes. Slice into squares and serve warm, or let it cool completely for a neater presentation.
