Ingredients
- 1 pound fresh green beans, trimmed
- 1 cup grated Pecorino Romano cheese
- 1 teaspoon freshly ground black pepper

- 2 tablespoons olive oil
Instructions
1. Prepare the Green Beans:
- Rinse the green beans thoroughly under cold water. Trim off both ends using a sharp knife or kitchen scissors. Pat dry with a kitchen towel to remove excess moisture.
2. Heat the Pan:
- Place a large skillet over medium-high heat. Add the olive oil and heat until it shimmers but does not smoke.
3. Cook the Beans:
- Add the trimmed green beans to the skillet, spreading them out into an even layer. Sprinkle the salt over the green beans.
- Sauté the green beans for 6 to 8 minutes, stirring occasionally, or until they start to blister and char on the outside while retaining a tender-crisp texture.
4. Add the Cheese and Pepper:
- Reduce the heat to medium and sprinkle the grated Pecorino Romano cheese over the green beans. Add the freshly ground black pepper.
- Continue to cook, stirring constantly, until the cheese melts and coats the beans evenly, approximately 2 to 3 minutes. The cheese will form crispy bits as it cooks.
5. Serve:
- Transfer the pan-fried green beans to a serving platter. Ensure any crispy cheese remnants are scraped from the pan and placed on top of the beans for added texture and flavor.
