Oven-Baked Chicken with Kimchi Sauerkraut and Cheese
Ingredients
- 4 chicken breasts
- 2 cups kimchi sauerkraut
- 1 cup canned creek corn, drained
- 1 cup shredded cheese, preferably cheddar or mozzarella
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Preheat the Oven
Set your oven to 375°F (190°C) and allow it to preheat while you prepare the dish.
2. Prepare the Chicken
Place the chicken breasts on a cutting board. With a sharp knife, make a small pocket in the side of each chicken breast, ensuring you don’t cut all the way through. Season both sides of the chicken with salt and pepper.
3. Make the Filling
In a mixing bowl, combine the kimchi sauerkraut, creek corn, minced garlic, and grated ginger. Mix well to distribute the flavors evenly.
4. Stuff the Chicken Breasts
Carefully fill each chicken pocket with the kimchi sauerkraut mixture. Use toothpicks to secure the opening, ensuring the filling stays inside during cooking.
5. Sear the Chicken
In a large ovenproof skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and sear each side for about 3-4 minutes, until golden brown.
6. Bake
Once seared, sprinkle the shredded cheese over the chicken breasts. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked (internal temperature of 165°F or 74°C) and the cheese is melted and bubbly.
7. Rest and Serve
Once baked, allow the chicken to rest for 5 minutes before serving. This helps the juices redistribute, ensuring a moist and flavorful chicken.
