Oven-Roasted Herb Chicken with Seasonal Vegetables



Ingredients



- 1 whole roasting chicken (about 4-5 lbs)
- 1/4 cup unsalted butter, softened
- 1 teaspoon dried rosemary
- 2 tablespoons fresh rosemary, chopped
- 1 teaspoon dried thyme
- 2 tablespoons fresh thyme, chopped
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup water
- 1 large onion, quartered (optional)
- 2 stalks of celery, cut into chunks (optional)
- 4 medium potatoes, cut into wedges (optional)
- 4 large carrots, cut into chunks (optional)

Instructions



1. Preheat and Prepare:
Preheat your oven to 425°F (218°C). Rinse the chicken thoroughly under cold water, then pat dry with paper towels.

2. Season the Chicken:
In a small bowl, combine softened butter, dried rosemary, fresh rosemary, dried thyme, fresh thyme, onion powder, salt, and pepper. Mix well until combined.

3. Butter the Chicken:
Gently loosen the skin over the breasts of the chicken by sliding your fingers under the skin. Be careful not to tear it. Smear about half of the butter mixture under the skin, directly onto the meat. Rub the remaining butter mixture over the outside of the chicken.

4. Prepare Vegetables:
If using, place the onion, celery, potatoes, and carrots at the bottom of a large roasting pan. Add the water to the pan. Place the chicken on top of the vegetables breast side up.

5. Roasting:
Place the roasting pan in the preheated oven. Roast the chicken for approximately 1 hour to 1 hour and 15 minutes, or until a meat thermometer inserted into the thickest part of the thigh reaches 165°F (74°C). Stir vegetables occasionally for even cooking.

6. Rest the Chicken:
Once the chicken is cooked, remove it from the oven and let it rest for about 10 minutes before carving. This will help the juices redistribute, making for a juicier chicken.

7. Serve:
Carve the chicken and serve with the roasted vegetables and pan juices.
