Oven-Baked BBQ Beef Ribs with Smoky Spice Rub

Ingredients

- 4 lbs beef ribs
- 2 tsp salt
- 1 tsp black pepper
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp avocado oil
- 1 cup BBQ sauce
- 2 tbsp apple cider vinegar
- 1 cup beef stock
- 1 tbsp Worcestershire sauce

Instructions

1. Prepare the Spice Rub:
In a small bowl, combine salt, black pepper, smoked paprika, garlic powder, and onion powder. Mix well to create a spice rub.

2. Season the Ribs:
Pat the beef ribs dry with paper towels to ensure the rub adheres well. Rub the spice mixture evenly over each rib, ensuring all surfaces are covered. Let the ribs sit for 20 minutes to allow the flavors to meld.

3. Preheat the Oven:
Preheat your oven to 300°F (150°C).

4. Sear the Ribs:
In a large, oven-safe pan over medium-high heat, add avocado oil. Once shimmering hot, sear the ribs on both sides for 3 minutes each, or until a golden crust forms. This step helps seal in juices and enhances flavor.

5. Prepare the Braising Liquid:
In a medium bowl, whisk together BBQ sauce, apple cider vinegar, beef stock, and Worcestershire sauce.

6. Braise the Ribs:
Remove the seared ribs from the heat. Pour the braising liquid over the ribs in the pan. Cover the pan tightly with aluminum foil or a lid.

7. Bake the Ribs:
Transfer the covered pan to the preheated oven. Bake for approximately 2 hours, or until the ribs are tender and the meat starts to pull away from the bone.

8. Caramelize the Ribs:
Increase the oven temperature to 425°F (220°C). Remove the foil or lid, and baste the ribs with additional BBQ sauce if desired. Bake, uncovered, for an additional 10 minutes, allowing the sauce to caramelize.

9. Serve:
Carefully remove the ribs from the oven and allow them to rest for 5-10 minutes before serving. Serve hot, adorned with additional BBQ sauce on the side if desired.
