Stove-Top Chicken with Salsa and Cashew Cream Sauce
Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh corn kernels
- 1 cup salsa (store-bought or homemade)
- 1 cup cashew cream
- 1/2 cup sour cream
- 1 ripe avocado, diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- Salt and pepper, to taste
Instructions
1. Prepare the Ingredients
Start by dicing the avocado, and chopping the cilantro. Set these aside for garnishing later.
2. Cook the Chicken
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and pepper on both sides.
- Once the oil is shimmering, carefully add the chicken breasts to the skillet.
- Cook for about 6 minutes on each side until they are golden brown and cooked through (internal temperature should reach 165°F).
- Remove chicken from the skillet and place on a plate to rest.
3. Prepare the Sauce
- In the same skillet, add the corn kernels and sauté for 3-4 minutes until they start to caramelize.
- Add the salsa to the skillet, stirring to combine and heat through for about 2 minutes.
- Lower the heat to a gentle simmer and incorporate the cashew cream and sour cream. Stir well to create a silky, cohesive sauce.
4. Combine and Serve
- Return the chicken to the skillet, nestling it in the sauce. Let it simmer for another 2-3 minutes to soak up the flavors.
- Taste and season with additional salt and pepper if necessary.
- Garnish with diced avocado and chopped cilantro before serving.
