Ingredients
- 2 cans (15 oz each) white beans, drained and rinsed
- 1/4 cup bean liquid (aquafaba)
- 4 cups mixed greens (such as spinach, kale, or Swiss chard), chopped
- 1 tsp salt (or to taste)
- 3 tbsp olive oil
Instructions
1. Prepare Ingredients:
- Drain and rinse the white beans. Reserve 1/4 cup of the bean liquid (aquafaba).
- Chop 4 cups of mixed greens into bite-sized pieces.
2. Heat the Oil:
- Place a large skillet over medium heat. Add 3 tablespoons of olive oil and let it heat until shimmering.
- This should take about 2 minutes.
3. Cook the Beans:
- Add the drained white beans to the skillet. Stir to coat them in the olive oil.
- Allow the beans to cook, stirring occasionally, until they begin to turn golden and crispy, approximately 5 minutes.
4. Add the Greens:
- Gradually add the chopped greens to the skillet, stirring them into the beans.
- Allow the greens to wilt down slightly, about 2-3 minutes.
5. Incorporate Aquafaba and Season:
- Pour in the reserved aquafaba and sprinkle 1 teaspoon of salt or to taste.
- Stir to combine, ensuring the beans and greens are well-coated with the liquid.
- Let everything simmer for another 5 minutes or until the greens are fully wilted and flavors meld together.
6. Adjust Seasonings and Serve:
- Taste the sauté and adjust seasoning with additional salt, if necessary.
- Serve immediately, dividing among plates or shallow bowls.
