Hearty Oven-Baked Shepherd's Pie
Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 2 medium carrots, peeled and diced
- 1 cup peas
- 1 cup corn
- 5 medium potatoes, peeled and quartered
- 4 tablespoons butter, divided
- 1/2 cup milk
- Salt, to taste
- Black pepper, to taste
Instructions
1. Prepare Potatoes:
- Bring a large pot of water to a boil. Add the quartered potatoes to the boiling water.
- Cook potatoes for about 20 minutes or until they are fork-tender.
2. Mash Potatoes:
- Drain the potatoes and return them to the pot.
- Add 3 tablespoons of butter and 1/2 cup of milk to the potatoes.
- Mash until smooth and creamy. Season with salt and pepper to taste.
3. Cook Beef Mixture:
- Preheat your oven to 375°F (190°C).
- In a large skillet, melt the remaining 1 tablespoon of butter over medium heat.
- Add diced onion and carrots to the skillet. Sauté for about 5 minutes until the onions are translucent and the carrots are tender.
- Add the ground beef to the skillet. Cook till browned, breaking it apart with a spatula as it cooks.
- Stir in peas and corn, and cook for an additional 5 minutes.
- Season with salt and black pepper to taste.
4. Assemble the Shepherd's Pie:
- Transfer the beef and vegetable mixture to a 9x13 inch baking dish, spreading it out evenly.
- Spoon the mashed potatoes over the beef layer, carefully spreading it to cover the entire surface.
5. Bake the Pie:
- Place the baking dish in the preheated oven.
- Bake for 30 minutes until the top is golden brown and crispy at the edges.
6. Serve:
- Allow the shepherd's pie to rest for a few minutes before serving. Divide into portions and enjoy your hearty dinner.
