Oven-Baked Cheesy Vegetable Casserole
Ingredients
- 2 cups yellow squash, sliced
- 2 cups zucchini, sliced
- 1 large onion, chopped
- 3 tablespoons butter
- 1 cup seasoned bread crumbs
- 1 cup cheddar cheese, shredded
- 1 red bell pepper, chopped
- 2 medium tomatoes, chopped
- 2 cloves garlic, minced
- 1/2 cup Parmesan cheese, grated
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
- 1/2 cup Ritz crackers, crushed
- 1/2 cup saltine cracker crumbs
- 1/2 cup Panko breadcrumbs
Instructions
1. Preheat Oven:
- Set your oven to 375°F (190°C) and allow it to preheat while you prepare the ingredients.
2. Prepare Vegetables:
- In a large skillet over medium heat, melt 2 tablespoons of butter.
- Add the onion and sauté until it becomes translucent, about 5 minutes.
- Stir in the garlic and continue to sauté for another minute until fragrant.
- Add the yellow squash, zucchini, red bell pepper, and tomatoes.
- Sauté for 7-10 minutes, until the vegetables are slightly softened.
3. Combine Ingredients:
- Remove from heat and transfer the sautéed vegetables to a large mixing bowl.
- Add seasoned bread crumbs, cheddar cheese, Parmesan cheese, Italian seasoning, salt, and pepper.
- Mix well to ensure all ingredients are evenly incorporated.
4. Prepare Topping:
- In a separate small bowl, combine Ritz crackers, saltine cracker crumbs, and Panko breadcrumbs.
- Drizzle with olive oil and stir to coat the crumbs evenly.
5. Assemble Casserole:
- Grease a 9x13-inch baking dish with the remaining tablespoon of butter.
- Spread the vegetable mixture evenly in the dish.
- Sprinkle the breadcrumb topping over the casserole.
6. Bake:
- Place the casserole in the preheated oven.
- Bake for 25-30 minutes, until the topping is golden brown and the cheese is bubbly.
