Roasted Sausage and Butter Beans with Feta & Rustic Baguette
Ingredients
- 2 tablespoons olive oil
- 1 pound sausage, sliced
- 2 cups canned butter beans, drained and rinsed
- 1 can (28 ounces) whole peeled tomatoes
- 2 stalks celery, diced
- 1 large onion, diced
- 2 medium carrots, diced
- 4 ounces feta cheese, crumbled
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 baguette, sliced
Instructions
1. Preheat the Oven: Preheat your oven to 375°F (190°C).
2. Prepare the Sausage and Vegetables:
- In a large ovenproof skillet, heat 1 tablespoon of olive oil over medium heat.
- Add sliced sausage and cook until browned on all sides, about 5 minutes.
- Remove sausage from the skillet and set aside.
3. Cook the Vegetables:
- In the same skillet, add the remaining tablespoon of olive oil.
- Add diced onion, celery, and carrots. Sauté until the vegetables become tender, about 7 minutes.
4. Combine Ingredients:
- Add the whole peeled tomatoes, lightly crushing them with the back of a spoon.
- Stir in the cooked sausage and butter beans.
- Season with salt and black pepper, mixing well until evenly combined.
5. Baking:
- Transfer the skillet to the preheated oven.
- Roast for 30 minutes until bubbling and slightly caramelized on top.
6. Prepare the Baguette:
- In the last 10 minutes of baking, place baguette slices on a baking sheet.
- Lightly brush with olive oil and place in the oven to toast until golden brown.
7. Finishing Touch:
- Once the sausage and beans are done, remove from the oven.
- Sprinkle crumbled feta cheese over the top and let it melt slightly.
8. Serve:
- Serve the roasted sausage and butter beans with toasted baguette slices, ensuring a scoop of the delicious topping with each bite.
