Citrus-Pomegranate Roasted Fruit Medley
Ingredients
- 2 medium oranges, sliced into rounds
- 1 cup pomegranate arils
- 4 sprigs fresh rosemary
- 4 sprigs fresh mint
- 2 crushed peppermint canes
- 1 lemon, sliced into rounds
- 1 cup fresh raspberries
- 4 sprigs fresh thyme
- 2 cinnamon sticks
- 2 large apples, cored and sliced
- 3 whole star anise
Instructions
1. Preheat the Oven: Preheat your oven to 350°F (175°C).
2. Prepare the Baking Dish: Select a large baking dish big enough to hold all the fruits in a single layer. Lightly grease the dish with a bit of oil or butter to prevent sticking.
3. Arrange the Fruit: Begin by placing the apple slices in the bottom of the dish. Arrange the orange and lemon slices interspersed with apple slices for an aesthetically pleasing look.
4. Add Berries and Pomegranate Arils: Sprinkle the raspberries and pomegranate arils evenly over the arranged citrus and apple slices.
5. Spice and Herbs: Nestle the cinnamon sticks and star anise among the fruit. Distribute the rosemary, mint, and thyme sprigs evenly over the top.
6. Peppermint Twist: Sprinkle the crushed peppermint canes evenly over the entire dish for a subtle minty flavor.
7. Roasting: Place the baking dish in the preheated oven. Roast the fruit medley for about 25 minutes (PT25M), until the apples are tender and the citrus slices slightly caramelized.
8. Cooling & Serving: Remove the dish from the oven and let it cool slightly. Serve the roasted fruit medley warm, either on its own or over yogurt or ice cream for an added indulgence.
