Irresistible Layered Raspberry Cheesecake Bites
Ingredients
- 2 cups Ritz crackers, crushed
- 1 cup brown sugar, packed
- 1 cup butter, melted
- 1 cup creamy peanut butter
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup whipped cream topping
- 1 cup raspberry preserves
Instructions
1. Prepare the Crust:
- Combine the crushed Ritz crackers, brown sugar, and melted butter in a medium bowl. Mix thoroughly until the mixture is well-combined and holds together when pressed.
- Press the crust mixture evenly into the bottom of an 8x8 inch baking dish. Use the back of a spoon to firmly pack it down.
2. Prepare the Cream Cheese Layer:
- In a mixing bowl, blend the softened cream cheese and powdered sugar using a hand mixer on medium speed until smooth.
- Gently fold in the whipped cream topping until just combined to maintain the airy texture.
3. Assemble the Layers:
- Spread the creamy peanut butter evenly over the prepared crust layer.
- Top with the cream cheese mixture, spreading gently to create a smooth layer.
- Gently spread the raspberry preserves over the cream cheese layer to form the top layer.
4. Chill the Cheesecake Bites:
- Cover the dish with plastic wrap or foil and refrigerate for at least 4 hours, or until the layers have set and firm.
- Before serving, slice into bite-sized squares.
