Shrimp and Spinach Phyllo Bites with Tzatziki
Ingredients
Main Ingredients:
- 12 sheets phyllo dough
- 1 lb shrimp, peeled and deveined
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
For the Sauces and Garnishes:
- 1/2 cup tzatziki
- 1/2 cup hummus
- 1/2 cup shrimp cocktail sauce
- 4 lemon wedges
Spices and Seasonings:
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 tbsp variety of spices (e.g., ground cumin, coriander)
Additional Components:
- 1/4 cup cilantro chutney
- 1/2 cup mixed diced fruit
- 1/4 cup assorted cured meats
- 1/2 cup assorted cheeses
- 2 tbsp olive oil, divided
- 1/4 cup cooked peas, for garnish
Instructions
1. Prepare the Shrimp:
- Preheat oven to 375°F (190°C).
- In a small bowl, combine shrimp with garlic powder, onion powder, paprika, black pepper, salt, and your choice of spices.
- Heat 1 tbsp olive oil in a skillet over medium heat.
- Sauté shrimp for 3-5 minutes until they're pink and cooked through. Remove from heat and set aside.
2. Prepare the Phyllo Dough:
- Lightly brush individual phyllo sheets with remaining olive oil. Stack and cut them into squares roughly 3x3 inches.
- Gently press phyllo squares into a mini muffin tin to form cups.
3. Prepare the Filling:
- In a bowl, mix chopped spinach and feta.
- Place a spoonful of spinach mixture into each phyllo cup.
- Top with cooked shrimp.
4. Bake the Phyllo Bites:
- Bake in preheated oven for 12-15 minutes, until phyllo is golden and crispy.
- Allow to cool slightly before removing from tin.
5. Assemble and Serve:
- Add a dollop of tzatziki on each bite.
- Arrange on a platter with hummus and cocktail sauce in dipping bowls.
- Garnish with peas, mixed fruit, assorted cured meats, and cheeses.
- Serve with lemon wedges and cilantro chutney on the side.
