Irresistible Apple Custard Puff Pastry Tart



Ingredients



- 1 box of puff pastry (2 sheets)
- 4 large apples (peeled, cored, and sliced thin)
- 2 cups milk
- 3/4 cup sugar
- 1/4 cup cornstarch
- 1/4 cup all-purpose flour
- 4 large egg yolks
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 whole egg (for egg wash)
- 1/2 cup apricot jam

Instructions



1. Preheat & Prepare Puff Pastry:
- Preheat your oven to 375°F.
- On a lightly floured surface, unfold the puff pastry sheets. Roll each sheet to a 12x12 inch square. Cut one of the sheets into 1-inch-wide strips for the borders.

2. Assemble the Tart Base:
- Lay the full pastry sheet on a parchment-lined baking sheet. Brush the edges with water and lay the 1-inch strips on top to form a raised edge. Use a fork to prick the base all over to prevent it from puffing up excessively.

3. Cook the Apples:
- In a large skillet over medium heat, add the sliced apples and 1/4 cup of sugar. Cook until the apples start to soften, about PT10M (10 minutes). Set aside to cool slightly.

4. Prepare the Custard:
- In a medium saucepan, whisk together the cornstarch, flour, and remaining sugar.
- Gradually whisk in the milk until smooth.
- Place the saucepan over medium heat, stirring constantly until the mixture thickens and begins to boil, approximately PT8M (8 minutes).
- In a separate bowl, whisk the egg yolks. Slowly add a bit of the hot milk mixture to the yolks to temper them, then whisk the yolk mixture back into the saucepan.
- Continue to cook while stirring for 2 more minutes. Remove from heat and stir in salt and vanilla extract.

5. Assemble the Tart:
- Pour the custard into the prepared pastry shell. Evenly distribute the cooked apple slices over the custard.

6. Bake the Tart:
- Beat the whole egg and brush the edges of the puff pastry with this egg wash.
- Bake in the preheated oven until the pastry is golden brown, approximately PT25M (25 minutes).

7. Finishing Touches:
- While the tart is baking, gently heat the apricot jam until it becomes liquid.
- Once the tart is out of the oven, gently brush the apricot jam over the apples for a glossy finish.

8. Cool & Serve:
- Allow the tart to cool before slicing. Serve warm or at room temperature.
