Pineapple Upside-Down Cake Delight
Ingredients
- 6 tablespoons butter, melted
- 1 cup brown sugar, packed
- 6 slices pineapple (canned or fresh)
- 6 cherries
- 2 large egg yolks
- 2 large egg whites
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sour cream
- 3/4 cup granulated sugar
Instructions
1. Prepare the Topping
- Preheat your oven to 350°F (175°C).
- In a 9-inch round cake pan, pour the melted butter evenly across the bottom.
- Evenly sprinkle the brown sugar over the melted butter. Arrange the pineapple slices on top of the sugar, placing a cherry in the center of each pineapple slice.
2. Prepare the Cake Batter
- In a medium-sized bowl, beat the egg yolks with lemon zest, lemon juice, and vanilla extract until well combined.
- Sift together the flour, baking soda, and salt in another bowl.
- Gradually add the flour mixture to the egg yolk mixture, alternating with the sour cream, starting and ending with the flour mixture. Mix until just combined.
3. Whip Egg Whites
- In a clean bowl, whisk the egg whites until soft peaks form.
- Gradually add the granulated sugar and continue whisking until stiff peaks form.
4. Combine and Fold
- Gently fold the whipped egg white mixture into the cake batter using a spatula. Be careful not to deflate the mixture.
5. Bake the Cake
- Pour the batter over the prepared pineapple and cherry arrangement in the cake pan.
- Smooth the top with a spatula and tap the pan gently on the counter to remove air bubbles.
- Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
6. Cool and Serve
- Allow the cake to cool in the pan for about 5 minutes.
- Carefully invert the cake onto a serving platter.
- Let it cool for at least 20 minutes before serving for best taste and texture.
