- 3 cups shredded coconut

1. Preheat the Oven: Set your oven to 325°F (163°C). Line a baking sheet with parchment paper to prevent sticking.

2. Prepare the Mixture: In a large mixing bowl, combine the egg whites and sugar. Whisk vigorously until the sugar is fully dissolved and the mixture looks frothy.

3. Flavor Infusion: Add the lemon extract to the egg and sugar mixture. Whisk again to ensure the flavor is evenly dispersed.

4. Combine with Coconut: Gradually fold the shredded coconut into the mixture with a spatula. Ensure the coconut is well-coated with the egg white mixture, which will act as a binder.
