Oven-Baked Herb-Crusted Salmon with Pistachio Pesto
Ingredients
- 4 salmon fillets (approximately 6 ounces each)
- 1/4 cup mayonnaise
- 2 tablespoons pesto
- 1/4 cup parsley, finely chopped
- 1/4 cup cilantro, finely chopped
- 1/4 cup pine nuts, lightly toasted
- 1/4 cup pistachios, shelled and finely chopped
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon chili flakes
- 1 tablespoon hot sauce
- Lemon wedges, for serving
- 2 cups arugula
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (205°C), ensuring it is fully heated before cooking the salmon.
2. Prepare the Pesto Mixture
In a small bowl, combine the mayonnaise, pesto, and hot sauce. Stir well until the mixture is smooth and creamy.
3. Create the Herb Crust
In a separate medium-sized bowl, mix the chopped parsley, cilantro, pine nuts, pistachios, Parmesan cheese, minced garlic, and chili flakes. This will form the flavorful crust for the salmon.
4. Prepare the Salmon Fillets
Arrange the salmon fillets on a lined baking sheet. Spread a generous layer of the pesto mixture over each fillet, ensuring an even coating.
5. Apply the Herb Crust
Gently press the herb crust mixture onto the top of each salmon fillet, ensuring it adheres well to the pesto layer.
6. Bake the Salmon
Place the prepared salmon fillets into the preheated oven. Bake for approximately 15-18 minutes or until the salmon is cooked through and the crust is golden brown. The internal temperature should reach 145°F (63°C).
7. Serve
Once cooked, remove the salmon from the oven and let it rest for a few minutes. Serve over a bed of fresh arugula with lemon wedges on the side for drizzling.
