Lemon Rosemary Butter Cookies
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon lemon zest (finely grated)
- 1 tablespoon fresh rosemary (finely chopped)
- 1/2 cup granulated sugar
- 1 cup unsalted butter (softened)
- 1/2 teaspoon salt
Instructions
1. Prepare the Oven:
Preheat your oven to 350°F (175°C).
2. Mix Dry Ingredients:
In a medium bowl, combine the all-purpose flour, lemon zest, chopped rosemary, and salt. Stir well to ensure the lemon zest and rosemary are evenly distributed.
3. Cream Butter and Sugar:
In a large mixing bowl, beat together the softened butter and granulated sugar using an electric mixer on medium speed until the mixture is light and fluffy. This should take about 2-3 minutes.
4. Combine Ingredients:
Gradually add the dry ingredients to the creamed butter and sugar mixture. Mix on low speed until just combined, forming a soft dough.
5. Shape the Cookies:
Scoop out the dough using a tablespoon and roll it into 1-inch balls. Place the balls onto a baking sheet lined with parchment paper, spacing them about 2 inches apart. Use the back of a fork to gently press down on the balls, creating a crisscross pattern.
6. Bake:
Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges of the cookies are golden brown.
7. Cool Cookies:
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
