Ingredients



- 2 pounds Yukon Gold potatoes
- 3 tablespoons neutral oil (such as canola or vegetable oil)
- 2 tablespoons fresh herbs (such as thyme, rosemary, or parsley), finely chopped
- 1 lemon, zested and juiced
- 1 teaspoon flaky salt

Instructions



1. Preheat the Oven:
- Preheat your oven to 425°F (220°C).

2. Prepare the Potatoes:
- Wash and scrub the Yukon Gold potatoes thoroughly to remove any dirt.
- Slice the potatoes into uniform wedges, about 1/2 inch thick, to ensure even cooking.

3. Season the Potatoes:
- Arrange the potato wedges on a large baking sheet.
- Drizzle the neutral oil over the potatoes, ensuring they are evenly coated.
- Sprinkle the freshly chopped herbs over the potatoes.

4. Roast the Potatoes:
- Place the baking sheet in the preheated oven.

5. Finish with Lemon and Salt:
