Lemon Bliss Breakfast Scones
Ingredients
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tablespoon lemon zest
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter, cubed
- 2/3 cup heavy cream
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 cup milk
Glaze
- 1 cup powdered sugar
- 3 tablespoons lemon juice
Instructions
1. Preheat the oven
- Set your oven to 375°F (190°C) and allow it to preheat, ensuring it's at the right temperature for baking the scones to fluffy perfection.
2. Prepare the dry ingredients
- In a large mixing bowl, combine 2 cups of all-purpose flour, 1/3 cup of granulated sugar, 1 tablespoon of lemon zest, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Stir well to evenly distribute the ingredients.
3. Incorporate the butter
- Add 1/2 cup of cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs.
4. Mix wet ingredients
- In a separate bowl, mix 2/3 cup of heavy cream, 1 tablespoon of lemon juice, and 1 teaspoon of vanilla extract. Stir until fully combined.
5. Combine wet and dry mixtures
- Gradually pour the wet ingredients into the dry mixture, stirring gently until a dough begins to form. Take care not to overmix – the dough should just come together.
6. Shape and cut the scones
- Transfer the dough onto a floured surface, gently knead it a few times, and shape it into a 1-inch thick circle. Cut the dough into 8 equal wedges.
7. Bake the scones
- Arrange the scones on a baking sheet lined with parchment paper. Brush the tops with 1/2 cup of milk to ensure a golden crust. Bake in the preheated oven for 20-25 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean.
8. Prepare the glaze
- While the scones are cooling, whisk together 1 cup of powdered sugar with 3 tablespoons of lemon juice in a small bowl until smooth.
9. Glaze the scones
- Drizzle the lemon glaze over the slightly cooled scones, allowing it to seep in and infuse them with extra lemony sweetness.
10. Cool and serve
- Allow the glaze to set for a few minutes before serving. Enjoy your breakfast scones warm for optimal flavor.
