Heavenly Banana Pudding Cookies
Ingredients
- 1 cup butter, softened
- 1 1/4 cups light brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 package (3.4 oz) instant banana pudding mix
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 2 1/4 cups all-purpose flour
- 1/2 cup powdered sugar
- 3 tablespoons milk
- 1 cup crushed vanilla wafers
Instructions
- Preheat your oven to 350°F (180°C).
- In a large mixing bowl, cream together the softened butter and light brown sugar until light and fluffy, about 3 minutes.
- Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract until well combined.
- Sprinkle in the instant banana pudding mix, baking soda, and kosher salt. Continue mixing until the dry ingredients are well incorporated.
- Gradually add the all-purpose flour, mixing on low speed until a soft dough forms.
- Fold in the crushed vanilla wafers gently until evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, drop dough onto ungreased baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10 to 12 minutes, or until the edges are golden brown. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
- To make the glaze, combine powdered sugar and milk in a small bowl. Stir until smooth and drizzle over cooled cookies. Allow the glaze to set before serving.
