Instructions



1. Preparation:
- Preheat your oven to 375°F (190°C).
- Line a large baking sheet with parchment paper for easy cleanup.

2. Roasting the Chicken and Vegetables:
- In a bowl, toss the chicken breasts, diced tomatoes, corn, black beans, diced potatoes, and broccoli florets with a drizzle of olive oil, salt, and pepper.
- Spread the mixture onto the prepared baking sheet.
- Roast in the oven for about PT30M, 30 minutes, or until the chicken is cooked through and the vegetables are tender.
- In the last 5 minutes, sprinkle shredded cheese over the mixture and allow it to melt.
