Southwestern Chorizo, Chicken, and Cheese Pasta Delight



Ingredients



- Main Components:
- 1/2 pound ground chorizo
- 1/2 pound chicken breast, diced
- 8 oz pasta (your choice)

- Vegetables & Add-ons:
- 1/2 cup corn kernels
- 1/2 cup green chile, chopped
- 1/2 cup tomatoes, diced
- 1/4 cup green onions, sliced
- 1/4 cup cilantro, chopped
- 1/4 cup black olives, sliced
- 1/2 cup onion, chopped
- 1/4 cup celery, chopped
- 1/2 cup artichoke hearts, chopped
- 1 cup fresh spinach
- 1 tablespoon chopped jalapeños
- 1/2 teaspoon mixed spices (cumin, paprika, garlic powder)

- Cheese & Dressing:
- 1 cup shredded cheese (cheddar or your preference)
- 1/2 cup mayonnaise
- 1/4 cup orange juice

- Garnishing:
- 1 handful tortilla chips, crushed
- Salt and pepper to taste

Instructions



1. Pasta Preparation:
- Cook 8 oz of pasta according to package instructions in a large pot on the stove. Drain and set aside.

2. Protein and Vegetable Mix:
- In a large skillet over medium heat, cook 1/2 pound ground chorizo until slightly browned, about PT5M (5 minutes).
- Add 1/2 pound diced chicken breast and continue cooking, stirring frequently until it’s fully cooked, approximately PT8M (8 minutes).

3. Sauté the Veggies:
- Add the chopped onion, celery, tomatoes, and artichoke to the skillet. Sauté for PT5M (5 minutes) until they are softened.

4. Incorporate the Greens:
- Stir in corn, green chile, spinach, and jalapeños. Cook until spinach has wilted, roughly PT3M (3 minutes).

5. Flavor Enhancement:
- Mix in the orange juice, mayonnaise, and spices. Stir well to coat all ingredients evenly. Season with salt and pepper to taste.

6. Cheese and Combining:
- Add the prepared pasta to the skillet, then sprinkle 1 cup of shredded cheese over the top. Stir gently until everything is well combined and cheese begins to melt, about PT2M (2 minutes).

7. Serving:
- Remove from heat and transfer to a serving dish. Top with green onions, cilantro, and sliced black olives. Garnish with crushed tortilla chips for added crunch.
