Ingredients
- 4 large sweet potatoes (about 2 ½ pounds)
- 3 tablespoons cornstarch
- 1 teaspoon kosher salt
- 2 teaspoons smoked paprika

Instructions
1. Preheat the Oven:
Preheat your oven to 425°F (218°C) and line a large baking sheet with parchment paper.
2. Prepare the Sweet Potatoes:
- Wash and peel the sweet potatoes.
- Cut them into evenly sized sticks, about ½ inch thick. This ensures even cooking and crispness.
3. Coat with Cornstarch:
- Place the sweet potato sticks in a large mixing bowl.
