Sautéed Artichoke Hearts with Herbed Lemon Butter
Ingredients
- 1 lb frozen artichoke hearts
- 2 tablespoons olive oil
- 1 shallot, finely chopped
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh lemon juice
- 3 tablespoons unsalted butter
- 1 tablespoon tender herbs, finely chopped (such as parsley, basil, tarragon, and chives)
Instructions
1. Prepare the Artichoke Hearts:
- Thaw the frozen artichoke hearts according to package instructions.
- Pat them dry with a paper towel to remove excess moisture.
2. Sauté Aromatics:
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the finely chopped shallot and diced yellow onion. Sauté for 5 minutes until they become translucent.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
3. Sauté Artichoke Hearts:
- Increase the heat to medium-high.
- Add the prepared artichoke hearts to the skillet, seasoning them with salt and black pepper.
- Sauté for 8-10 minutes, stirring occasionally, until the artichoke hearts are golden brown and crisp at the edges.
4. Add Lemon and Butter:
- Reduce the heat to low.
- Pour in the fresh lemon juice, stirring it into the artichokes.
- Add the unsalted butter, allowing it to melt and coat the artichoke hearts evenly.
5. Incorporate Tender Herbs:
- Remove the skillet from heat.
- Gently stir in the finely chopped tender herbs – parsley, basil, tarragon, and chives.
- Taste and adjust seasoning with more salt or pepper if necessary.
6. Serve:
- Transfer the sautéed artichoke hearts to a serving dish.
- Garnish with additional herbs if desired and serve warm.
