Zesty Green Chile Mac & Cheese
Ingredients
- 8 oz elbow macaroni
- 4 oz diced green chiles (drained)
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper jack cheese
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tsp ground mustard
Instructions
1. Boil the Pasta
Start by cooking 8 oz of elbow macaroni according to the package instructions. Use a large pot of salted water on medium-high heat. This should take approximately 8 minutes or until the pasta is al dente. Once cooked, drain and set aside.
2. Create the Cheese Sauce
In a large saucepan over medium heat, combine 1 cup of heavy cream and 1 cup of chicken broth. Heat the mixture until it begins to simmer, stirring occasionally. This usually takes about 3-5 minutes.
3. Add Flavor and Spice
Stir in 1 tsp of ground mustard and 4 oz of diced green chiles into the saucepan. Allow this to cook for 2 minutes to let the flavors meld.
4. Melt the Cheese
Gradually add 1 cup of shredded cheddar cheese and 1 cup of shredded pepper jack cheese to the saucepan. Stir continuously until the cheeses are completely melted and the sauce is smooth, which should take about 3-4 minutes.
5. Combine Macaroni and Sauce
Add the drained elbow macaroni to the cheese sauce. Stir well to ensure the pasta is evenly coated with the sauce.
6. Finalize the Dish
Allow the mac & cheese to cook on low heat for an additional 3-5 minutes, stirring occasionally, to ensure all flavors are absorbed.
