- 4 ears of fresh sweet corn, husked
- 1/2 cup crema
- 2 tablespoons fresh lime juice

1. Preheat the Grill:
Begin by heating your charcoal grill to medium-high heat, ensuring the coals are evenly distributed for consistent cooking.

2. Prepare the Corn:
Husk the ears of fresh sweet corn and remove any remaining silk. Wash and pat them dry with a paper towel.

3. Grilling the Corn:
Place the sweet corn directly on the grill grates. Turn the corn occasionally, grilling for approximately PT10M (10 minutes) until charred marks form, and the kernels become tender.

4. Prepare the Cotija Crema:
While the corn grills, combine 1/2 cup of crema, 2 tablespoons of fresh lime juice, 1 teaspoon of ground cumin, 1 teaspoon of chili powder, 1/2 teaspoon of black pepper, and 1/2 teaspoon of salt in a small mixing bowl. Whisk everything together until smooth and well combined.

5. Assemble the Corn with Crema:
