Ultimate Cheesy Potato Gratin with Fresh Herbs

Ingredients

- 4 large russet potatoes, peeled and thinly sliced
- 1 large onion, finely sliced
- 1 cup sharp cheddar cheese, shredded
- 1 cup parmesan cheese, grated
- 1 cup Gruyère cheese, shredded
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 3 cups whole milk
- 1 teaspoon mustard powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cloves garlic, minced
- 2 tablespoons fresh thyme or rosemary, chopped

Instructions

1. Preheat your oven to 375°F (190°C).

2. Prepare the cheese sauce:
- In a medium saucepan over medium heat, melt 3 tablespoons of unsalted butter.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in 3 tablespoons of flour and cook, whisking constantly, for about 2 minutes until the mixture is bubbling and has a light golden color.
- Gradually whisk in 3 cups of milk, ensuring no lumps form.
- Bring the mixture to a simmer, stirring continuously until the sauce thickens, taking about 5 minutes.
- Stir in mustard powder, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Reduce heat to low and slowly add shredded cheddar, grated parmesan, and shredded Gruyère cheese, stirring until completely melted and smooth. Remove from heat.

3. Assemble the gratin:
- Grease a 9x13 inch baking dish with a small amount of butter.
- Layer half of the sliced potatoes evenly on the bottom of the dish.
- Spread half of the sliced onions on top of the potatoes.
- Pour half of the cheese sauce over the onions and potatoes, spreading evenly with a spatula.
- Sprinkle half of the fresh herbs on top.
- Repeat the layering process with the remaining potatoes, onions, cheese sauce, and herbs.

4. Bake the gratin:
- Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
- Remove the foil and continue baking for an additional 30 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.

5. Serve your delicious gratin:
- Allow the gratin to cool for about 10 minutes before serving.
- Optionally, garnish with a sprinkling of extra fresh herbs before presenting to your dinner guests.
