Gourmet Roasted Guinness Glazed Ham with Cajun Vegetables and Gruyere Cheese

Ingredients

For the Ham:
- 5 lbs ham
- 1 cup brown sugar
- 1 tablespoon ground ginger
- 1/2 cup honey
- 1/2 cup Guinness beer
- 1 teaspoon black pepper
- 1 teaspoon salt

For the Vegetables:
- 2 cups carrots, sliced
- 2 cups potatoes, cubed
- 2 cups Brussels sprouts, halved
- 1 large onion, sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt

For the Gruyere Cheese Sauce:
- 2 cups milk
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/2 cups Gruyere cheese, grated
- 1/4 teaspoon nutmeg

Instructions

1. Prepare the Oven:
- Preheat the oven to 350°F (175°C).

2. Prepare the Ham:
- In a small saucepan, mix together brown sugar, ginger, honey, and Guinness. Heat over medium until sugar dissolves completely. Remove from heat.

3. Roast the Ham:
- Place the ham in a large roasting pan. Pour half of the glaze over the ham, reserving the rest for later. Season with salt and black pepper.
- Roast in the preheated oven for PT2H (2 hours), basting with the remaining glaze every 30 minutes.

4. Prepare the Vegetables:
- In a large bowl, combine carrots, potatoes, Brussels sprouts, onion, and garlic. Toss with olive oil, thyme, salt, and black pepper.

5. Roast the Vegetables:
- Spread the vegetable mixture in a single layer on a baking sheet. Roast in the oven alongside the ham for PT1H (1 hour) or until vegetables are tender and golden brown, turning halfway through cooking.

6. Make the Gruyere Cheese Sauce:
- In a medium saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Slowly whisk in milk, ensuring no lumps form. Continue to whisk until the sauce thickens, about 5 minutes.
- Remove from heat and stir in Gruyere cheese and nutmeg until the cheese is melted and smooth.

7. Final Assembly:
- Remove the ham and vegetables from the oven. Let the ham rest for PT10M (10 minutes) before slicing.
- Serve the ham slices drizzled with Gruyere cheese sauce and accompanied by the roasted vegetables.
