Mexican Street Corn Casserole Delight
Ingredients
- 2 cups Fire Roasted Corn
- 4 tablespoons Butter, unsalted
- 1 cup Mexican Crema
- 2 teaspoons Chili Powder
- 1 cup Cotija Cheese, crumbled
- 1/4 cup fresh Cilantro, chopped
Instructions
1. Preheat the Oven
Set your oven to 375°F (190°C) and allow it to preheat thoroughly. This will ensure even cooking for your casserole.
2. Prepare the Corn Mixture
In a medium-sized bowl, combine the fire-roasted corn, 1/2 cup of crumbled Cotija cheese, 3 tablespoons of Mexican crema, and 1 1/2 teaspoons of chili powder. Mix well until all ingredients are evenly distributed.
3. Melt the Butter
In a small saucepan over medium heat, melt the butter until it is fully liquefied. Be cautious not to let it brown.
4. Assemble the Casserole
In a greased baking dish, pour in the corn mixture. Drizzle the melted butter over the top, ensuring an even coverage for maximum flavor.
5. Bake the Casserole
Place the baking dish in the preheated oven. Bake for 25 minutes, or until the cheese is melty and the top is beginning to turn golden brown.
6. Add Toppings
Carefully remove the casserole from the oven. Immediately, evenly spread the remaining 1/2 cup of Cotija cheese and the remaining 1/2 teaspoon of chili powder over the top.
7. Garnish and Serve
Allow the casserole to cool slightly. Just before serving, drizzle the remaining Mexican crema over the top and sprinkle the fresh cilantro as a garnish. Serve hot and enjoy a delightful dinner experience.
