Decadent Chocolate-Carrot Tres Leches Cake



Ingredients



- Baking spray with flour for greasing
- 2 cups grated carrots
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup vegetable oil
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 14 oz sweetened condensed milk
- 1 cup heavy whipping cream
- 2 tablespoons unsweetened cocoa powder
- 1 cup semisweet chocolate chips
- 4 tablespoons unsalted butter
- Chocolate sprinkles for garnish

Instructions



1. Preheat the Oven:
Preheat your oven to 350°F (175°C).

2. Prepare the Baking Dish:
Spray a 9x13 inch baking dish with baking spray with flour. Make sure the entire surface is evenly coated.

3. Mix the Carrot Cake Batter:
In a large mixing bowl, whisk together the grated carrots, granulated sugar, eggs, and oil until well mixed.

4. Combine Dry Ingredients:
In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Gradually add this to the carrot mixture, stirring until just combined.

5. Bake the Cake:

6. Prepare the Chocolate Tres Leches Mixture:

Once the cake is baked, remove it from the oven and let cool for 10 minutes. Use a fork or skewer to poke holes evenly across the cake surface. Pour the chocolate tres leches mixture over the cake, allowing it to soak in completely.

8. Make the Chocolate Ganache:
In a microwave-safe bowl, combine the chocolate chips and butter. Microwave in 30-second intervals, stirring between each, until melted and smooth. Let cool slightly.

9. Whip the Cream Topping:
In a separate bowl, whisk the remaining 1/2 cup of heavy whipping cream until soft peaks form. Gently fold in the cooled chocolate ganache until fully incorporated.

10. Assemble the Cake:
Spread the chocolate ganache cream over the soaked cake. Smooth the top with a spatula.

11. Garnish and Chill:
Sprinkle chocolate sprinkles generously over the top. Refrigerate the cake for at least 1 hour before serving.
