Smoked Salmon & Egg Stuffed Avocado Boats



Ingredients



- 2 ripe avocados, halved and pitted
- 4 large eggs
- 2 tablespoons mayonnaise
- 1 teaspoon white vinegar
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon sweet paprika
- Pinch of flaky sea salt for garnish
- 1 teaspoon sriracha
- 2 tablespoons diced pickled jalapeños
- 1 teaspoon hot sauce
- 2 tablespoons diced pickled onions
- 2 tablespoons diced sweet pickles
- 2 tablespoons diced dill pickles
- 1 tablespoon chopped capers
- 4 ounces smoked salmon, thinly sliced
- 2 strips bacon, cooked and crumbled
- 2 tablespoons feta cheese, crumbled
- 1 tablespoon chopped chives
- 1 tablespoon chopped dill
- Mixed fresh herbs for garnish

Instructions



1. Prepare the Avocado Base:
- Carefully scoop out a bit more from each avocado half to create a deeper pocket, reserving the scooped-out flesh.
- Mix the reserved avocado flesh with pickled jalapeños, pickled onions, sweet pickles, dill pickles, capers, smoked salmon, and half of the crumbled bacon.

2. Cook the Eggs:
- Bring a medium pot of water to a boil over high heat on the stove.
- Reduce to a simmer, and carefully add eggs.
- Cook for 10 minutes.
- Transfer eggs to an ice bath to cool for 5 minutes.
- Once cooled, peel the eggs and chop them finely.

3. Make the Filling:
- In a bowl, combine chopped eggs, mayonnaise, white vinegar, Dijon mustard, salt, black pepper, smoked paprika, sweet paprika, sriracha, and hot sauce. Mix until well combined.

4. Assemble the Avocado Boats:
- Fill each avocado half with the egg mixture.
- Top with the smoked salmon and avocado mixture.
- Sprinkle with remaining bacon, feta cheese, chives, dill, and a pinch of flaky sea salt.

5. Garnish and Serve:
- Garnish with fresh herbs of your choice.
- Serve immediately as a snack.
