Vibrant Quinoa & Chickpea Salad with Herb-Infused Dressing
Ingredients
For the Salad:
- 1 cup quinoa, rinsed

For the Dressing:
- 1/4 cup extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1 tablespoon maple syrup

- 1/2 teaspoon black pepper
- Juice of 1 lemon
Instructions
1. Cook the Quinoa:
