Oven-Baked Lime Chili Glazed Chicken
Ingredients
- 2 lbs chicken thighs (bone-in, skin-on)
- 2 limes (juice and zest)
- 2 tablespoons chili paste
- 2 tablespoons fish sauce
- 2 tablespoons agave syrup
- 3 cloves garlic, minced
- 2 tablespoons light soy sauce
- 2 tablespoons sunflower oil
- 3 tablespoons sweet sesame dressing
Instructions
1. Preheat the Oven
Preheat the oven to 400°F (200°C) to ensure it's hot and ready for baking.
2. Prepare the Marinade
In a medium bowl, whisk together the chili paste, fish sauce, agave syrup, minced garlic, light soy sauce, and sunflower oil until fully combined.
3. Marinate the Chicken
Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and let it marinate for at least PT30M (30 minutes) in the refrigerator for deeper flavor.
4. Zest and Juice the Limes
While the chicken is marinating, zest and juice the limes. Set aside both the zest and juice separately.
5. Prepare the Baking Dish
Lightly oil a baking dish large enough to hold the chicken pieces in a single layer. Arrange the marinated chicken thighs in the dish, skin-side up, ensuring they're spaced evenly.
6. Bake the Chicken
Place the baking dish in the oven and bake for PT45M (45 minutes), or until the chicken thighs are golden brown and the internal temperature reaches 165°F (75°C).
7. Prepare the Glaze
In a small saucepan over medium heat, combine the sweet sesame dressing and lime juice. Simmer for a couple of minutes until slightly thickened.
8. Glaze the Chicken
Once the chicken is cooked, remove it from the oven and brush the lime-sesame glaze generously over the top of each thigh. Sprinkle with lime zest for added citrus brightness.
9. Serve
Transfer the glazed chicken to a serving platter, allow it to rest for a few minutes, then serve hot, garnished with lime wedges if desired.
