Ingredients

- 1/2 cup brown sugar
- 1/4 cup grainy mustard
- 1/4 cup water
- 4 boneless, skinless chicken breasts (approximately 1.5 lbs)
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Prepare the Glaze
In a small saucepan over medium heat, combine the fig jam, brown sugar, grainy mustard, and water. Stir until the brown sugar is fully dissolved and the mixture is smooth and syrupy. This should take about PT5M (5 minutes). Remove from heat and let cool slightly.
3. Prepare the Chicken
Place the chicken breasts in a baking dish. Lightly season with salt and pepper on both sides.
4. Apply the Glaze
Pour the prepared fig jam glaze over the chicken breasts, ensuring that each piece is thoroughly coated.
5. Bake the Chicken
Place the baking dish in the preheated oven and roast for PT30M (30 minutes) or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
6. Baste Midway
About halfway through cooking, baste the chicken with the glaze from the dish. This ensures the chicken remains moist and flavorful.
7. Rest and Serve
Once the chicken is fully cooked, remove it from the oven and let it rest for PT5M (5 minutes) to allow the juices to redistribute. Serve hot, garnished with fresh herbs if desired.
